Hillick & Hobbs Estate

Hillick & Hobbs is the Finger Lakes passion project of internationally acclaimed winemaker Paul Hobbs — a man who has spent 30-plus years crafting celebrated wines across California, Argentina, Armenia, Spain, and France. Named in honor of his parents, Joan Hillick and Edward Hobbs, who met at nearby Cornell University, the winery represents a homecoming and a mission: to prove that Riesling from this region can rival the finest in the world.

In 2013, Paul acquired the 78-acre estate on the banks of Seneca Lake and began a 10+ year project to plant high-density vines on the property's steep slate slopes — a viticultural commitment that pushes the boundaries of what's been attempted in the Finger Lakes. The results speak for themselves: a lineup of limited-production dry Rieslings that are singular, structured, and age-worthy by any measure.

The tasting room sits at the top of the estate with panoramic views over Seneca Lake. The tasting experience offers a vertical flight of Estate Dry Rieslings alongside selections from the Paul Hobbs Wines portfolio — all complemented by small food pairings from Hazelnut Kitchen. Walk-ins are welcome; tastings are $22 per person, charged 48 hours in advance of a reservation.

Our Story

Hillick & Hobbs is a rare thing on the Seneca Lake trail — a winery with a genuinely world-class pedigree that still manages to feel approachable and grounded. Paul Hobbs didn't come back to upstate New York to make a statement. He came back because he believed in the land, and the wines prove it.

The vertical Riesling tasting is the experience here: seeing how the same vineyard expresses itself across vintages is one of the most genuinely educational and delicious things you can do in the Finger Lakes. The views from the tasting room don't hurt either. If you have even a passing interest in serious white wine, this is a stop you'll think about long after the drive home.
