Hillick & Hobbs is a rare thing on the Seneca Lake trail — a winery with a genuinely world-class pedigree that still manages to feel approachable and grounded. Paul Hobbs didn't come back to upstate New York to make a statement. He came back because he believed in the land, and the wines prove it.
The vertical Riesling tasting is the experience here: seeing how the same vineyard expresses itself across vintages is one of the most genuinely educational and delicious things you can do in the Finger Lakes. The views from the tasting room don't hurt either. If you have even a passing interest in serious white wine, this is a stop you'll think about long after the drive home.
